Lettuce salad of figs, scollops and chorizo sausage

Around the same time last year, I was enrolled in a 4 months cooking class. It was also the first time I bought and cooked with figs. I love fruit because it is colourful but I also like fruits that has a dull colour on the surface but when you open it up it is a bright, beautiful looking fruit inside. Some good examples are figs and passion fruit. It is like how we see people, never judge by the look!

 

 

I saw some fresh figs in the market yesterday which reminds me it’s fig season again! I bought a box of 10 without any hesitation and experimented with my first fig dish tonight – lettuce salad of figs, scollops and chorizo sausage.

Ingredients

  • baby cos lettuce leaf 2 cups
  • 4 figs cut into quarters
  • 5 large scollops (scollops are dear these days!)
  • 1/2 chorizo sausage, sliced
  • walnut 5-6 pieces (wasn’t part of my dish because I didn’t have any)
  • white wine
  • olive oil
  • balsamic vinegar
  • salt & pepper

Steps

  1. place lettuce leaf into a mixing bowl, add olive oil, balsamic vinegar, salt & pepper to season
  2. heat up a grill pan in high heat, brush the pan with oil
  3. grill chorizo, scollops and figs until golden brown ( beware of the cooking time of each and avoid overcooking; chorizo ~5-7 minutes, scollops ~1 minute each size, figs ~1-2 minutes)
  4. when the chorizo, scollops and figs are almost cooked, turn to high heat and pour 2 tb white wine into mixture until all liquid evaporated
  5. serve lettuce salad on a serving plate and arrange scollops, figs and chorizo on top
    sprinkle walnut around serving plate

*salad can be replaced with endive and radicchio

*scollops can be replaced with prawns

*walnut can be replaced with cashews or macadamia
